A shout-out for stout!



The origins of the Seasons date back to the time of the breweries farms, in the present regions of Northern France, Hainaut and Wallonia. Legend has it that these beers were brewed to be drunk by seasonal workers during harvests. Before the advent of artificial refrigeration, it was practice for brewers to produce seasonally. From the end of Autumn to the beginning of Spring, the colder weather lent itself better to 'control' of fermentation. 

Nobody can accurately describe what a typical Season of centuries ago tasted, but let's assume they were far from their modern versions. These high fermentation beers were produced by farmers (imply part-time brewers) and the fact that they were not sold commercially is a valid reason to believe that the repeatability of the sensory qualities of these beers not relevant.

The practice of seed rotation, and the difficulty of predicting harvests, resulted in brews with varying proportions of cereals (barley, wheat, rye, spelled). Add random use of hops in a varied blend of spices and spices. Obviously these farmers-brewers were doing with what they had! We keep the modern definition of a Season: dry and fruity!

The White is a Belgian style wheat beer. Its famous golden, cloudy colour occurs naturally as the higher concentration of protein in the malted wheat synergizes with the yeast. Its intricate aromas and flavours include spicy notes with a citrusy flavour profile that surprises, delights and ultimately refreshes.

In an IPA, hops are the dominant force and indeed, our IPA features an abundance of Cascade and Amarillo hops, combined with pale malt and crystal malt. This unfiltered, highly fermented, golden beer delivers aromas of fresh hops, hints of citrus and spruce with a bitter flare that dominates in taste.
